How to Cook Protelle Protein Pasta

Protelle protein pasta cooks exactly like ordinary pasta: 8–10 minutes in boiling salted water. No special handling is needed — unlike chickpea or lentil flour pasta, which overcooks easily.

Step by step

  1. One litre of water per 100 g of pasta. Less water means a higher starch concentration and pasta that sticks.
  2. Salt once it boils — roughly 7–10 g (a heaped teaspoon) per litre.
  3. Add the pasta to boiling water and stir straight away so it does not stick to the bottom.
  4. Cook for 8–10 minutes uncovered, stirring occasionally. For al dente, start tasting at eight minutes.
  5. Drain. Do not rinse — sauce clings better to unrinsed pasta.

How much per portion

  • 80–100 g dry is a standard single portion.
  • 100 g of dry Protelle provides 33 g of protein.
  • A 300 g pack makes about three portions.

Why the water darkens

This is normal. Sunflower seed naturally contains chlorogenic acid, a polyphenol that partly passes into the water and colours it. The same process is what makes the pasta itself dark. It is not a dye and not a sign that anything has gone wrong. There is more in the guide to sunflower protein.

Avoiding overcooked pasta

  • Do not leave the pasta sitting in the water after you turn off the heat.
  • If you will finish it in a pan with sauce, take it off a minute early.
  • Do not cover the pot — it boils over and the pasta overcooks faster than you expect.

What to serve it with

Protelle's dark colour and neutral taste work well with assertive sauces: tomato, cream, pesto, or simply olive oil, garlic and herbs. A few worked-out ideas: avocado cream pasta with bacon, a tuna bowl, a cold salad with ham and mozzarella — and the rest in recipes.
