Pasta Salad with Ham and Mozzarella

A cold salad that comes together in the time the pasta takes to cook. The ham can be swapped for pieces of chicken or tinned tuna.
The pasta contributes 19.8 g of protein per serving (120 g dry across 2, at 33 g per 100 g). That is the pasta alone — the other ingredients are not counted, because their figures depend on the brand used.
Ingredients
- Protelle pasta — 120 g dry
- Ham — 150–200 g (or pieces of chicken, or tinned tuna)
- Cherry tomatoes — 200 g
- Mozzarella — 200 g
- Sweetcorn — 80–100 g
- Rocket — 2 handfuls
- Olive oil
Method
- Cook the pasta in salted water as directed on the pack — 8–10 minutes. Drain, add olive oil and stir so it does not stick, then leave to cool.
- Dice the tomatoes or quarter them; dice the ham and mozzarella (mini mozzarella balls work too).
- In a large bowl, mix the pasta with the ham, tomatoes, sweetcorn and mozzarella. Add the rocket. Add more olive oil and salt to taste.
