Tuna Protein Pasta Bowl

A light lunch or dinner that works both straight away and chilled. The dressing takes a minute while the pasta cooks.

The pasta contributes 16.5 g of protein per serving (50 g dry across 1, at 33 g per 100 g). That is the pasta alone — the other ingredients are not counted, because their figures depend on the brand used.

Ingredients

  • Protelle pasta — 50 g dry
  • Tinned tuna — 90–100 g
  • Avocado — half
  • Cucumber — 1 small
  • Sweetcorn — 2 tbsp
  • Red onion — a quarter
  • Leaves (lettuce, rocket, mixed) — a handful
  • Seeds or nori, to scatter
  • For the dressing: Greek yoghurt — 2 tbsp
  • For the dressing: soy sauce — 1 tbsp
  • For the dressing: lemon juice — 1 tsp
  • For the dressing: sriracha (optional) — a few drops

Method

  1. Cook the pasta in salted water as directed on the pack — 8–10 minutes.
  2. While it cooks, prepare and chop everything else.
  3. In a small bowl, combine the yoghurt, soy sauce, lemon juice and sriracha for the dressing.
  4. Assemble: put the pasta in a deep bowl and arrange the vegetables and tuna over it in sections. Spoon over the dressing and scatter with seeds or crumbled nori.
  5. Serve straight away or chilled — it works well as a light lunch or dinner.
