Avocado Cream Pasta with Bacon

A warm dish with a thick creamy sauce and no butter — the body comes from the avocado. The pasta’s dark colour works well against the green.
The pasta contributes 19.8 g of protein per serving (120 g dry across 2, at 33 g per 100 g). That is the pasta alone — the other ingredients are not counted, because their figures depend on the brand used.
Ingredients
- Protelle pasta — 120 g dry
- Avocado — 1 large
- Lemon — a quarter
- Cream, 10–15% — 100 ml
- Bacon — 6 rashers
- Parmesan
- Salt, pepper, dried garlic
Method
- Cook the pasta in salted water as directed on the pack — 8–10 minutes. Keep 2–3 tbsp of the cooking water.
- Fry the bacon in a dry pan until crisp, then drain it on kitchen paper and chop.
- For the sauce, blend the avocado, lemon juice, cream, salt and seasoning until creamy. Loosen with a little of the reserved pasta water if needed.
- Toss the drained pasta with the avocado cream in a large bowl.
- Divide between plates, top with the bacon and scatter with parmesan. Finish with freshly ground pepper if you like.
