Sunflower Protein: What It Is and Why Protein Pasta Is Made From It

Sunflower protein is the protein fraction isolated from sunflower seed after the oil has been pressed out. Sunflower seed is roughly 20% protein, and once the oil is removed a concentrated protein fraction remains in the meal. Purified and milled, that becomes sunflower protein concentrate.

Why sunflower

  • Neutral taste. This is the main reason. Pea and soy protein carry a pronounced legume note that has to be masked. Sunflower protein is mild and close to neutral, so pasta made with it keeps a familiar flavour and texture.
  • A side stream, not a separate crop. Sunflower is grown primarily for oil. The protein comes from what is left after pressing, so producing it does not require additional land to be sown.
  • Local raw material. Sunflower is an undemanding crop that grows well in Ukrainian soils without heavy irrigation. Protelle is made in Ukraine from Ukrainian raw material.
  • Non-GMO. Sunflower grown in Ukraine is not genetically modified.

Why the pasta is dark

Sunflower seed naturally contains chlorogenic acid, a polyphenol — the same compound found in coffee beans, vegetables and fruit. During the brief 120 °C steam treatment the pasta undergoes for food-safety reasons, it darkens, much the way coffee beans darken when roasted. That is where Protelle's dark brown colour comes from, and why the cooking water takes on some colour. It is a natural property of the raw material, not a dye.

In Protelle pasta, sunflower protein concentrate delivers 33 g of protein per 100 g of dry product, against 13 g in standard durum wheat pasta. That is the highest figure among the products listed in our protein pasta overview.
